Trevally Fish Crudo

Fresh fish crudo - an easy dish that will wow your dinner guests. The key is in the dressing which you can make ahead. Here the taste is a delicious mix of sweet, salty, spice and a little bit of tanginess. First taste of Good Chow's new 'everything sauce': savoury with a hint of sweetness, reminiscent of Cantonese char siu pork or Peking duck.  Serve sauce in little pourers and pour in front of guests for that little bit of drama. I like it spicy and dotted more chilli oil directly onto the fish before pouring sauce over.

INGREDIENTS:

3 trevally fillets, deboned, skinned, pat dry

3 tbsp Everything Sauce

1 tbsp lime juice

1 tbsp of Aromatic chilli oil

1 tsp Fish Roe five spice

GARNISH:

Coriander, leaves picked

Spring onion, thinly sliced

Makrut lime leaves, julienned

fresh red chilli, sliced

Fried shallots

METHOD:

1. Whisk Everything sauce, lime juice, Aromatic chilli oil and Fish Roe five spice together in a small glass jug.

2. Slice the fresh Trevally filllets at a 45 degree angle, into centimeter-thick pieces.

3. Arrange the fish slices on individual plates (or a serving platter if sharing). 

4. Garnish with coriander, spring onion, makrut lime leaves, red chilli slices and fried shallots.

5. Transfer sauce into little pourers and pour over the prepared sauce when ready to serve.
