Tempura Oysters

Ingredients:

1 doz fresh

1/2 shell oysters

Good Chow's Secret Everything Sauce

Batter:

1 egg (lightly beaten)

1 cup flour (sifted)

1 cup ice cold water 

Hot oil for deep frying

METHOD:

1. Scoop a teaspoon around each oyster to release it from the shell, set the shell aside for use later.

2. To make the batter, combine the lightly beaten egg with the ice cold water, then add the sifted flour.  Stir very gently to just combine, being careful not to overtax the batter.

3. Dust the oysters very lightly with flour and then dip into the tempura mix.

4. Gently drop into hot oil, cook until just golden and crisp on the outside. Remove from the oil, drain for a moment, then place back on the shell and douse with Good Chows Secret 'Everything Sauce’

Using the oyster shell provides a ‘vehicle’ to make the most of the sauce. They make the perfect party food, where you can just pick up the entire shell - but you can serve the sauce separately in a dipping bowl.
