EVERYTHING SAUCE SALMON TRAY BAKE

Everything Sauce is the latest from Napier based Good Chow. Proudly made in NZ with no MSG, artificial flavours or artificial colouring, this sauce is also vegan. Great in stir fries or brushed onto meat or fish. The flavour profile of Everything Sauce is somewhere in the realm of oyster sauce and hoisin sauce. Lots of umami with a little sweetness and a subtle spice finish. With ease of use in mind, Everything Sauce sauce is pourable! Woohoo! This fuss-free dinner can easily be adapted to feed one or two people and only needs 15 minutes in a 200°C oven. I've served with noodles here but if you're serving with rice, start cooking your rice ahead of time so everything will be ready at once.
INGREDIENTS:
Good Chow Everything Sauce
500g salmon fillet, skin on, pin bones removed
1 broccoli, cut into florets
2-3 courgettes, bias sliced
2 red onions, thinly sliced
4 garlic cloves, roughly chopped
2 Tbsp olive oil
1 tsp sesame oil
¼ tsp chilli flakes (optional)
Salt and pepper
Garnish:
lime wedges
sesame seeds
chopped coriander
Cooked rice or noodles (to serve)
PREPARATION:
1. Pre-heat oven to 200°C and line an oven tray with baking paper.
2. Take a large bowl and add broccoli, courgette, red onion, garlic and 2 Tbsp Good Chow Everything Sauce, olive oil, sesame oil and red chilli flakes. Mix until combined.
3. Cut salmon fillet into 4 even pieces and arrange skin side down on the oven tray. Brush the tops and sides of the salmon pieces with 2 Tbsp Good Chow Everything Sauce. Transfer vegetables to the oven tray around the salmon pieces.
4. Season with salt and pepper and bake for 15 minutes at 200°C.
5. Garnish with lime wedges, sesame seeds, and coriander. Serve with cooked rice or noodles.
